


Fried onion egg sandwich for brunch! awesomeness :-)
This breakfast was sooo awesome and easy and healthy and everything you need to feel awesome all day long!
Made this for myself and the hub the other day and we really enjoyed it!

Good morning everyone,..uh…afternoon :-P
After a long, well rested night, I’m feeling so much better and ready to tackle those exams :-) BUT…exam or not, eating is a must and a beautiful omelet for brunch is to die for. Just thought sharing it with you will make it even more enjoyable

I used:
- 1/2 a medium sized onion
- some Vietnamese ham but you can use any kind of ham you like
- 1/4 of a red bell pepper
- 2 cloves of garlic
- 3 eggs
- about 2 table spoons of vegetable oil
- 1 tea spoon of fish sauce/ or 1/2 a tea spoon of salt
- some cilantro flakes or fresh cilantro

Crack the eggs into a bowl


Add the fish sauce/salt, the herb to the eggs and beat them up. I’m using my chopsticks here and in fact, I use my chopsticks in cooking about 99% of the time.

Heat up your pan with some vegetable oil, with high heat. When the oil is hot, throw in the garlic and onion.


…then the red bell peppers, then the ham


Pour in the eggs after a few mins of saute-ing the vegies. Lower the heat to medium-low

use chopsticks/ a fork to open some pockets

Flip it over after 2-3 mins

Fold in half and serve!
Try it out, skip the ham if you don’t want. The whole process took about 10 mins including chopping and cutting. Let me know how you like it!
